Instructions
- Preheat and prep: Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- Cream wet ingredients: In a large bowl, cream together peanut butter, room temperature butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes with an electric mixer.
- Add egg and vanilla: Beat in the egg and vanilla extract until well combined.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Don’t overmix.
- Add chocolate chips: Fold in chocolate chips until evenly distributed throughout the dough.
- Shape and bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until edges are lightly golden but centers still look slightly underbaked. Cookies will be soft to the touch and may look slightly puffed.
- Cool cookies: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. They’ll finish setting during this time.
