Getting the Right Champagne to Juice Balance
The classic mimosa ratio is half champagne, half juice, but that often makes drinks too sweet and kills the bubbles. This recipe uses about 60% champagne to 40% strawberry mixture, which keeps the fizz while adding enough fruit flavor.
Don’t use expensive champagne here – a decent Prosecco or Cava works great. Save the good stuff for sipping straight. You want something dry rather than sweet since the strawberries add plenty of sweetness.

Equipment Needed
- Blender or food processor
- Fine-mesh strainer
- Large pitcher (at least 8 cups capacity)
- Champagne flutes or wine glasses
Instructions
- Make strawberry puree: Add strawberries, sugar, and lemon juice to a blender. Blend until completely smooth, about 1 minute. Strain through fine-mesh strainer into a bowl, pressing solids with a spoon to extract as much liquid as possible. Discard pulp.
- Combine fruit base: Pour strained strawberry puree and orange juice into your pitcher. Stir to combine. This base can be made up to 4 hours ahead and refrigerated.
- Add champagne and serve: Just before serving, slowly pour the chilled champagne into the pitcher. Stir very gently once to combine – you want to preserve the bubbles. Serve immediately in champagne flutes, garnished with fresh strawberry slices and mint if desired.
