Instructions
- Blanch peas: Bring a medium saucepan of salted water to boil. Add fresh peas and cook for 2 minutes until bright green and just tender. Immediately drain and plunge into ice water to stop cooking. Drain thoroughly and pat dry.
- Toast bread: Toast bread slices until golden brown and crispy, about 2-3 minutes per side in a toaster or grill pan. Brush one side of each slice with 1 tablespoon olive oil while still warm.
- Make ricotta mixture: In a small bowl, mix ricotta with lemon juice, lemon zest, and half the mint. Season with salt and pepper. Stir until smooth and well combined.
- Prepare pea mixture: Lightly mash peas with a fork, leaving some whole for texture. Stir in remaining 2 tablespoons olive oil and remaining mint. Season with salt and pepper to taste.
- Assemble bruschetta: Spread ricotta mixture evenly on oiled side of each toast. Top with pea mixture and sprinkle with Parmesan cheese. Cut each slice in half diagonally and serve immediately while toast is still crisp.
