Getting the Right Strawberry Consistency
The key to smooth mimosas is properly preparing your strawberries. Use ripe, sweet berries and puree them completely to avoid chunks that’ll settle at the bottom of glasses. Strain the puree through a fine-mesh sieve if you want an ultra-smooth texture, though most people don’t mind small bits.
Fresh strawberries work best, but frozen ones are fine if thawed completely first. You’ll get about 1/2 cup of puree from 1 cup of fresh berries.

- 4 champagne flutes
Instructions
- Make strawberry puree: Add strawberries and sugar to a blender or food processor. Blend for 30 to 45 seconds until completely smooth. Strain through a fine-mesh sieve if you prefer no pulp.
- Add puree to glasses: Spoon 2 tablespoons of strawberry puree into the bottom of each champagne flute.
- Pour champagne: Slowly pour chilled champagne into each flute, filling about 3/4 full. The champagne will naturally mix with the puree, creating a beautiful pink gradient.
- Garnish and serve: Gently stir each mimosa once with a cocktail spoon or knife to blend. Garnish with fresh strawberry slices on the rim and serve immediately.
