Instructions
- Make lavender syrup: Combine sugar, water, and lavender buds in a medium saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves completely. Reduce heat to low and simmer for 3 minutes. Remove from heat and let steep for 30 minutes.
- Strain and cool: Strain the syrup through a fine mesh strainer into a pitcher, pressing the lavender buds gently to extract flavor. Discard the lavender buds. Let syrup cool to room temperature, about 20 minutes.
- Add lemon juice: Stir fresh lemon juice into the cooled lavender syrup. Refrigerate for at least 2 hours until completely chilled.
- Assemble drinks: To serve, fill glasses with ice cubes. Pour 1/2 cup of the lavender-lemon mixture into each glass, then top with 3/4 cup sparkling water. Stir gently and garnish with fresh lavender sprigs and lemon slices if desired.
