Instructions
- Preheat and prep: Preheat oven to 375°F. Line two large baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together oat flour, baking soda, and salt. Set aside.
- Cream butter mixture: In a large bowl, beat softened butter with both sugars using an electric mixer on medium speed until light and fluffy, about 3 minutes. Beat in eggs one at a time, then vanilla extract.
- Combine and add chips: Reduce mixer speed to low and gradually add the flour mixture, beating just until combined. Fold in chocolate chips with a wooden spoon.
- Shape and bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until edges are golden brown and centers look slightly underbaked. Cool on baking sheet for 5 minutes before transferring to a wire rack.
