Getting the Right Strawberry Consistency
The key to beautiful mimosas is getting your strawberry puree smooth but not watery. Use ripe, sweet strawberries and blend them completely – you don’t want chunks floating in your drink.
Strain the puree if you want it completely smooth, but I usually skip this step since a little texture is fine. If your strawberries aren’t very sweet, add a teaspoon of sugar to the puree before blending.

- 6 champagne flutes
Instructions
- Make strawberry puree: Add halved strawberries and sugar (if using) to a blender or food processor. Blend until completely smooth, about 30 seconds. Taste and add more sugar if needed.
- Add puree to glasses: Pour 2-3 tablespoons of strawberry puree into each champagne flute. The amount depends on how strong you want the strawberry flavor.
- Add champagne and garnish: Slowly pour champagne into each flute, filling to about 3/4 full. Pour gently down the side of the glass to preserve bubbles. Garnish each glass with a fresh strawberry on the rim.
