Lavender Lemonade for a Pretty Spring Brunch Spread
Fresh lavender transforms ordinary lemonade into something special for spring entertaining. The floral notes aren’t overpowering—they add a subtle fragrance that pairs beautifully with the tart lemon.
This makes a gorgeous pitcher drink that looks as good as it tastes. Your guests will ask for the recipe.
Why Dried Lavender Works Better Than Fresh
Dried culinary lavender gives you more control over the flavor intensity than fresh sprigs. The concentrated oils in dried buds infuse evenly into the simple syrup without any bitter green notes that fresh stems can add.
Look for food-grade lavender at specialty stores or online. English lavender varieties work best—they’re less camphor-forward than other types. You’ll only need a tablespoon for the whole pitcher, so a small bag lasts for multiple batches.

Lavender Lemonade for a Pretty Spring Brunch Spread
Equipment Needed
- Medium saucepan
- Fine-mesh strainer
- Large pitcher
- Citrus juicer or reamer
Instructions
- Make lavender syrup: Combine sugar, 1 cup water, and dried lavender in a medium saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves completely. Reduce heat to low and simmer for 5 minutes to infuse the lavender flavor.
- Steep and strain: Remove syrup from heat and let steep for 15 minutes. Strain through a fine-mesh strainer into a bowl, pressing the lavender buds gently to extract flavor. Discard the buds and let syrup cool to room temperature, about 20 minutes.
- Mix lemonade: Juice the lemons to get 1 cup of fresh juice. Strain out any pulp and seeds if desired. In a large pitcher, combine the cooled lavender syrup, lemon juice, and 4 cups cold water. Stir well to combine.
- Chill and serve: Refrigerate the lemonade for at least 2 hours until well chilled. Taste and adjust with more lemon juice if you want it tarter, or add a splash of water if it’s too strong. Serve over ice with lemon slices and fresh lavender sprigs if desired.
