How to Cook Shrimp That Stays Tender
Don’t overcook the shrimp or it’ll turn tough and chewy. Cook them just until they turn pink and start to curl – about 2-3 minutes per side for medium shrimp. They’ll continue cooking slightly after you remove them from heat.
Pat the shrimp completely dry before seasoning and cooking. Wet shrimp won’t get a nice sear and will steam instead. Room temperature shrimp cook more evenly than cold ones straight from the fridge.

- Season shrimp: Pat shrimp completely dry with paper towels. In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Cook shrimp: Heat a large skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink, curled, and opaque throughout. Remove from heat immediately.
- Toast bread: While shrimp cooks, toast bread slices until golden brown and crispy on both sides.
- Prepare avocado: Cut avocados in half, remove pits, and scoop flesh into a bowl. Add lime juice and salt, then mash with a fork until mostly smooth with some small chunks remaining.
- Assemble toasts: Spread avocado mixture evenly on toast slices. Top each with 4-5 shrimp, sprinkle with cilantro and red pepper flakes. Serve immediately while toast is still crispy.
