Patriotic Red White and Blue Berry Tart for 4th of July
Every Fourth of July, this tart shows up on our table and disappears within minutes. It started as a simple experiment, strawberries and blueberries arranged over cream cheese filling, and now it's the most requested dessert I make all summer.
This recipe is as forgiving as it is beautiful. You don't need a pastry degree or any special equipment, just a tart pan, a hand mixer, and a little patience while the filling chills.

Ingredients
Graham Cracker Crust
- 1.5 cups graham cracker crumbs , about 10 full crackers, crushed
- 3 tbsp granulated sugar
- 6 tbsp unsalted butter , melted
Cream Cheese Filling
- 8 oz cream cheese , softened to room temperature
- 0.5 cup powdered sugar
- 1 tsp pure vanilla extract
- 0.75 cup heavy whipping cream , cold
Berry Topping
- 1 cup fresh strawberries , hulled and sliced
- 0.75 cup fresh blueberries , rinsed and dried
- 0.5 cup fresh raspberries , rinsed and dried
- 2 tbsp apricot jam , optional, for a shiny glaze

- Make sure your cream cheese is fully softened before mixing. Cold cream cheese creates lumps that won't smooth out, and the filling won't be as light.
- Pat your berries completely dry before arranging them on the tart. Extra moisture can make the filling soggy if the tart sits too long.
- You can make the crust and filling a full day ahead and refrigerate overnight. Just add the berries within a few hours of serving so they stay bright and fresh.
- If you don't have a tart pan with a removable bottom, a 9-inch pie dish works fine. The slices won't lift out as cleanly, but the flavor is exactly the same.
